This coffee hails from the Cordillera de Fuego farm in the Tarrazu region of Costa Rica. Where owner and founder, don Luis Campos, has been experimenting with different processing methods such as natural, honeys, thermic (termico) and anaerobic. The Termico process, invented by don Luis Campos, is a process in which coffee cherries are picked at their ripest as to ensure high sugar content, the coffee is semi-washed with some mucilage remaining – breaking down the natural sugars and caramelizing them. This process results in a balanced yet exceptionally sweet and fruity flavor. We have roasted this coffee to a more modern lighter level allowing us to bring forward tasting characteristics of sugary sweetness, hibiscus, berry, and citrus fruit.
